Alex’s Scallop Ceviche Recipe

1 lb. sea scallops completely submerged in fresh lime juice

Dice 1/2 large white onion. Soak in a bowl with ice water to the reduce bitterness.

Dice 1 garden fresh tomato, 1 jalapeño, and cilantro to taste

Strain the onions.

Strain scallops but leave 1/4 of the lime juice.

Gently fold all ingredients. Add cubed avocado just prior to serving.

Several weeks ago Jesse Cook sent out a request to his fans to record clips of themselves singing a simple melody that he composed. The song is soulfully beautiful and evocative. And Jesse is also an incredibly talented filmmaker. He combined all the clips into this stunning, poignant and sweet music video.

How does this relate to Beauty on the Wing – Life Story of the Monarch Butterfly. You may recall that Jesse provided the soundtrack to my documentary and I feel so blessed about that. His music is gorgeous and beautiful and I can think of no better match for my butterflies ❤

From Jesse – A couple of weeks ago I made a simple request: I asked you, my fans, if we could sing a song together from all over the world. Initially, I wasn’t sure if any of you would take me up on my offer, so I was completely unprepared for the flood of videos that overwhelmed my inbox.

Today I’m proud to share our creation, called “One World One Voice”.

I’ve never been a part of something like this before, or felt so connected to you, my fans. I feel honoured you put your trust in me, and I hope you will be as proud of the results as I am. As we traverse this difficult period, I draw solace from your generosity, your courage, and above all, your beautiful voices.
